Answer
On 6 January 2025, AVIF support was added to the GD PHP extension extension for Plesk PHP handlers 8.1 and later
Note: The above does not apply to Plesk servers using the operating system Ubuntu 18.04.
As an unsupported workaround, you can try using the following tutorial in order to obtain .avif and .avifs files support on an Ubuntu 22.04 server:

Can you tell us any reason, why AVIF support is not added yet?
This must be something big, if it prevents plesk from AVIF nowadays, right?
This article needs updating. Support for AVIF was introduced in Plesk Obsidian 18.0.66 Update 2: https://docs.plesk.com/release-notes/obsidian/change-log/#php-250106
