Is it possible to forward HTTP(S) requests from the source server to the target for a time of migration to avoid sites downtime as some customers use external DNS?
HTTP(S) requests forwarding from the source server to the target one is not implemented in Plesk Migrator extension.

The general recommendation is to decrease TTL values for DNS zones before migration to a small value (around 1 minute) for the migration time, migrate, change IP in DNS zone, optionally resync content, then restore old TTL values.
In case if some customers will not change IP to IP of the target server, it is possible to configure port forwarding from source server to the target one.
Such configurations should be performed on your own and it is not supported by Plesk.
