Why is sender's IP address different from IP address of domain from which mail was sent using MailEnable?
MailEnable uses only one of interfaces for outbound traffic. Refer to the MailEnable Documentation for the details How to control which interface or IP Address is used for outbound mail
First interface specified in MailEnable Management > Servers > localhost > Services and Connectors > SMTP > Properties > Outbound is used as default.
