Question
How to change the location for virtual hosts in Plesk for Windows Server?
Answer

Connect to a Plesk server via RDP.

Start Plesk Reconfigurator at Windows Start > All Programs > Plesk.

In Plesk Reconfigurator, select Change Virtual Hosts location.

Specify a new location for virtual hosts and click Next. All existing website data will be transferred to the new location as well.
Note: During this operation websites will be stopped.
Note: Network drive as virtual hosts location (e.g. NTFS hosted on AWS FSx) is not supported by Plesk yet. Vote for this feature on Plesk UserVoice.
Note: The new location folder must be empty.

What effect will changing the vhosts location have on active sites? Will they be slow or become unavailable?
@Scott, already created websites will be transferred to the specified folder too and they will be down until the process ends. Thus, it's recommended to change the default vhost directory during maintenance timeframe when the server isn't loaded.
