Answer
- Log in to Plesk.
- Go to Subscriptions > example.com > Change Subscriber
As an alternative, or if it is required to change a subscriber for multiple subscriptions:
- Log in to Plesk.
- Go to Subscriptions and select one/several subscriptions.
- Click Change Subscriber button.
For example, Resellers are marked as a "human" sign in the list:

When I change the subscription of a domain from a certain subscriber to another (customer to Plesk administrator in this case) does this have any effect on the domain and its settings? So in other words; is it safe to only change the subscriber so that everything else on the domain remains exactely the same?

However, the IP address can be changed during this operation to another one (e.g. from one dedicated IP address to another). It this case, all domain's configuration files will be rebuilt with new information
There is no official way to modify the service plan owner, but attempt to apply a tiny hack, changing 'owner id' to 'Templates' in 'psa' on your server database.
This may or may not work, but it is still unacceptable and you can use it at your own risk.
